Ingredients
🥩 1 chuck roast
🧂 Salt

🌶️ Chipotle powder
🥣 2 cups beef broth
🧄 4 cloves of garlic, minced

🌶️ 1 pack of Birria seasoning blend (or use homemade blend if available)
🧀 2 cups Monterey Jack cheese, shredded
🧀 2 cups Queso cheese, shredded
🌶️ 1 bag of Doritos
🥣 Queso dip (optional, for extra cheesiness)
🥗 Pico de gallo, for topping
Instructions
1- Prep the Chuck Roast:
- Season the chuck roast generously with salt, pepper, and chipotle powder.
2- Sear the Meat:
- In a large pot or Dutch oven, sear the chuck roast on all sides over medium-high heat until brown.
- Once seared, remove from the pot and set aside.
3- Deglaze the Pot:
- Add a little beef broth to the pot to deglaze.
- Stir to lift all the flavorful bits from the bottom.
4- Sauté Aromatics:
- Add minced garlic and chopped red onion to the pot.
- Sauté until the onions are translucent.
5- Add Birria Seasoning:
- Sprinkle the Birria seasoning into the pot.
- Bloom it for extra flavor.
6- Cook the Meat:
- Place the chuck roast back in the pot.
- Add the rest of the beef broth.
- Cover the pot and place it in a preheated oven at 425°F (220°C) for 1 hour and 15 minutes.
- After that, uncover and let it cook for another 1 hour and 20 minutes until the beef is tender and juicy.
7- Build the Nachos:
- On a large serving platter, layout Doritos as the base.
- Add shredded Monterey Jack and Queso cheese on top.
- Layer the hot, juicy birria beef over the cheese.
8- Top It Off:
- Sprinkle additional queso dip over the top, if desired.
